I tried this blueberry muffin recipe and it rocked. Check it out.
Note: The original pin includes a crumble topping, but I was
too lazy to make it. I also used frozen blueberries that were thawed.
Ingredients: (Makes about 9-11 muffins)
•1 1/2 cup
all-purpose flour•1/2 tsp salt
•3/4 cup white sugar
•2 tsp baking powder
•1/3 cup canola oil
•1/3 cup whole milk
•1 whole egg, room temperature, beaten
•1 1/2 cup fresh blueberries, rinsed and patted dry
Begin by heating the oven to 400 degrees.
In a bowl, add the flour, sugar, salt, oil, and baking
powder. To a small bowl, add the milk
and beaten egg and mix that together.
Add this to the flour mixture, and begin mixing with a wooden spoon
until all lumps are out. Next, add in the blueberries, and gently fold into the
mixture, being careful not to bust any of them open.
Take this mixture, and begin filling the muffin liners. You
will want to fill them almost to the top but not all of the way as they will
rise up a bit.
Place these in the oven for about 25 minutes. Remove from
the oven to let cool a bit.
